I was searching around the web for a savoury type of high protein snack when I came across a recipe for James Martin’s Salmon Croquettes.

Which were pretty easy to make even though I’m terrible at deep frying. Hence why I recommend an air fryer. I can never seem to get the temperature right. But I digress, they turned out well and were very tasty.

Now truth be told, they took a lot longer than I expected. However, I did make a big batch and freeze half of them so that could be why.

Speaking of freezing them. I froze them with just the salmon and potato and without the crumb. I tried some the next day just thrown in the oven at 180 fan for 15 minutes then sprinkled with cheese and they were absolutely banging. In fact, I think I preferred them without the deep frying and without the crumb. They saved me like 25 minutes of prepping and cooking and felt a whole lot healthier. Not to mention it was easier.

They do have a tendency to fall apart without the crumb keeping them together however that’s not really a con. Just eat them with a knife and folk. Simple fix.

The Dip

For dipping. These salmon croquettes go beautifully with chilli jam. However, you can mix it up and serve them with whatever you want. I swapped out out the chilli jam for a simple sriracha mayo.

For the sriracha mayo I mixed 3/4 of mayonnaise with 1/4 sriracha in a small dipping bowl. But you can change this depending on how spicy you like your sauce.

What I would suggest is mixing a 50/50 mix, half mayonnaise and half sriracha then having a taste. If you want it more spicy simply mix more sriracha, if it’s too spicy then tone it down by adding more mayonnaise.

To take your mayonnaise and sriracha dip to the next level you can add a dash of herbs. Sprinkle in some dried parsley and thyme and stir it in. Absolutely banging!

The Prep

The prep for this is the part of this is what’s going to take up the bulk of your time. The cooking takes less then 10 minutes. You only need to fry them for around 2-3 minutes each until they get some colour. It’s the prep that will make or break you salmon croquettes. The prep can be quite tedious.

So I recommend reading through the method first and making sure you have all your ingredients and equipment ready to make the prep as stress free as possible and this recipe will be a breeze.

And you can always do what I did and make a larger batch then freeze them.

Above is what my prep station looks like for these salmon croquettes for when covering in breadcrumbs.

With my left hand I dip the croquettes in flour (bowl on the far left) then in the egg (bowl in the middle).

Then I swap to my right hand to finish them of by rolling them in breadcrumbs before putting them on the parchment lined plate.

Doing it this way means you only have one sticky crumb hand and one clean hand.

The above photo is what the salmon fillings will look like. Not the prettiest but once you shape them into croquettes, they sure do look a lot better.

See, looks better once shaped right? My technique for shaping is to grab a piece of croquette mixture, roll it into a tight ball. Then roll it into a small sausage and tap down the tops and bottoms.

Make a meal out of it

These Salmon croquettes work perfectly as a little snack or light lunch. However, you can totally turn it into a full meal by accompanying the croquettes with some side dishes.

Mixing up a healthy salad or some sweet potato fries turns this into quite the healthy and high protein meal. Which is great considering the croquettes are deep fried in oil.

As a side note, if it’s health you’re going for, use an air fryer.

Crunchy salmon croquettes with a spicy dipping mayo or sweet chilli jam. Recipe by James Martin.

For the croquettes

  1. Place the potatoes in salted water and bring to a boil then simmer until tender. (about 20 minutes) Drain and mash, season to taste and cool. Once cold, add the chopped dill and salmon.
  2. Mix well and season again if needed. Divide the mixture into 25g or 1oz pieces and roll into cylinder shapes on a lightly floured surface, you should end up with 20ish in total.
  3. On a tray in three separate bowls have flour, beaten eggs and breadcrumbs. Coat the cylinders first in the flour, then egg, then in the breadcrumbs and repeat to give them a double coating. Place in the fridge for 1 hour to firm up before cooking.
  4. Preheat the oil to 190˚C/375˚F and deep fry the croquettes until golden brown – it should take 1 to 2 minutes, drain on kitchen paper. If you don't want to deep fry (maybe you don't want to waste the oil, are scared by the heat, or are on a healthy kick) then stick them in an air fryer for 15 minutes at 190c.

For the dipping sauce

  1. Mix both ingredients together in a small pot.

Notes

Optional oil

If deep frying, you will need enough oil to cover the croquettes, for me that was 500ml, you may need more or less so make sure you buy a big bottle. If you're using an air fryer to cook your salmon croquettes, then you will not need the oil. Instead just stick them in without any oil, or for extra crispiness, spray/rub with a tiny bit of oil.

The dipping sauce

Spicy mayo works great but if you want to switch it up then I highly recommend going with what James Martini recommends, a small pot of sweet chilli jam.
