If you love a good hands-free side dish, this oven-roasted Broccoli might become your new favorite way to enjoy broccoli.

Easy Roasted Broccoli

Broccoli has always been a popular healthy side dish that pairs well with Pan-Seared Steak, Chicken Breast Recipes, and just about any dinner. Roasting the broccoli florets in the oven gives it slight crispiness out the outside and keeps them tender and juicy. It also looks great with irresistible golden edges.

You will love how versatile this recipe is. Our favorite topping here is parmesan but you can tweak the seasonings or add-ins to your personal preferences with great results (see variations and ideas below).

Ingredients

The ingredients for roasted broccoli and so minimal and you most likely already have them all on hand!

  • Broccoli – Fresh broccoli is best for this recipe.
  • Oil – Though we used olive oil for the recipe, you can substitute it for your favorite oil on hand. Avocado oil or even vegetable oil will work just fine.
  • Seasoning – We kept the seasoning to just the classic salt and pepper.
  • Garlic – Though we love freshly minced garlic with broccoli, you can easily substitute for garlic powder or opt out of the garlic completely. If you don’t want the garlic crispy, add it halfway through cooking instead of at the beginning.

Pro Tip: You can also roast the stem of the broccoli head, but be sure to use a vegetable peeler to remove the tough layer on the broccoli stem, otherwise, it can be tough to chew. Once the stem is peeled, cut it into bite-sized pieces and toss it in with the rest of the broccoli.

How to Roast Broccoli

The oven-baked broccoli is best when enjoyed right out of the oven so plan on having your entree ready to be served.

  1. Prep – Preheat the oven and line a rimmed baking sheet with parchment paper.
  2. Cut broccoli – Cut the broccoli into medium florets. Be sure to cut them into uniform pieces for even cooking.
  3. Season- Add the broccoli to the baking sheet, drizzle with oil, add the garlic, salt, pepper and toss to coat.
  4. Cook- Roast the broccoli until the edges are lightly browned and desired doneness.

How Long Do You Roast Broccoli?

The roasting time for the broccoli florets will depend on two factors, the size of your florets and the temperature of the oven. Here are some standard times for medium florets:

  • At 350°F: 30 – 35 minutes.
  • At 375°F: 25 – 30 minutes.
  • At 400°F: 18 – 22 minutes.
  • At 425°F: 14 – 18 minutes.

Roasted Broccoli Variations

Though this classic roasted broccoli recipe is absolutely delicious and doesn’t really need anything else, here are some ideas in case you want to try some add-ins:

  • Almond – Add sliced almonds to either the last 5 minutes of baking to taste the almonds, or just add them when serving.
  • Lemon – Squeeze some fresh lemon juice over the roasted broccoli just before serving.
  • Cheese – Add freshly shredded or grated parmesan cheese before serving.
  • Bacon – Add bite-sized bacon pieces to the broccoli about 10 minutes before the time is up for bacon broccoli.
  • Dressing- Whip up a fresh batch of Avocado Ranch to serve as a dipping sauce for the broccoli.
  • Heat – If you like some heat in your food, add some red pepper flakes to broccoli when roasting.
  • Balsamic – Drizzle with our Balsamic Glaze before serving.

Make-Ahead

You’ll want to enjoy the roasted broccoli warm for the best results but leftovers also keep well.

  • Prep-Ahead: You can pre-chop and measure out the seasonings and oil ahead of time. Just before baking, toss it all together and put it in the oven.
  • Refrigerate: Once the broccoli has cooled to room temperature, transfer to an airtight container and refrigerate for 2-3 days.
  • Freeze: Transfer cooked and cooled broccoli to a freezer-safe bag or container for up to 3 months.

Ingredients

Servings: 4 servings

  • 1 1/2 pounds broccoli (1 head), cut into medium florets*
  • 3 Tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 tsp salt, or to taste
  • ¼ tsp pepper, or to taste
  • 2 Tbsp freshly grated parmesan, to serve, optional

Instructions

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.

  • On the prepared baking sheet, toss the broccoli florets with the oil, garlic, salt, and pepper.

  • Spread the broccoli in a single layer and roast in the oven until the edges are golden and lightly browned and the stems are crisp-tender, about 14-18 minutes.

  • Sprinkle with freshly grated parmesan if using and serve right away.

Notes

*You can roast the broccoli stem as well, just be sure to use a vegetable peeler to remove the fibrous outer layer on the stem first, or it will be too tough to chew.
