Michaelloves cabbage. He always raves about my mom’s cabbage. So when he found a huge corned beef brisket on sale (A $26.14 brisket marked down to $11.18! Woohoo!), I knew that I had to give in and make it with cabbage and potatoes. After consulting with Momma, I knew what I wanted to try and crossed my fingers that it would work because I only had one shot to test this recipe. Thankfully, it was delicious!
You see, both kids had colds and their appetites were gone. We had tried getting them to eat everything I could think to try. I asked if they wanted the Crock Pot One Pot Corned Beef Cabbage Potato Dinner, but since they had no idea what corned beef was (it has been a while since we had it), I did not receive a yes from either one of them. However, once they took one small bite of mommy’s (they may not want to eat off of their own plate, but they will sure eat off of mommy’s every single time), they were hooked. I was thrilled they were eating, but not so thrilled when I came home a few nights later to find out Michael and the kids had cleaned out the leftovers while I was at church! The stinkers!
Crock Pot One Pot Corned Beef Cabbage Potato Dinner
Ingredients forCrock Pot One Pot Corned Beef Cabbage Potato Dinner
- 3.5-4 lb corned beef brisket with seasoning packet
- 1.5-1.75 cups water
- 3-4 potatoes, peeled and cut into large pieces
- head of cabbage, cored and sliced
- 1 stick of butter, sliced
- salt and pepper to taste
How to MakeCrock Pot One Pot Corned Beef Cabbage Potato Dinner
- Place your brisket fat side up in your 6-quart crock pot (I used Cera, my6 Quart Crock Pot with Ceramic Coated Pot)
- Sprinkle your seasoning packet on top and pour your water over the top of your brisket until it is almost covered, but not completely
- Make a foil packet that will fit in your crock pot on top of your brisket and fill it with your potatoes, sliced cabbage, butter slices and salt and pepper to taste
- Close foil packet and place on top of brisket
- Cover and cook on low for 8 hours
- Slice brisket and serve with cabbage and potatoes

Ingredients
- 3.5 lb corned beef brisket with seasoning packet
- 1.5 cups water
- 3.5 potatoes peeled and cut into large pieces
- head of cabbage cored and sliced
- 1 stick of butter sliced
- salt and pepper to taste
Instructions
Place your brisket fat side up in your 6-quart crock pot (I used Cera, my 6 Quart Crock Pot with Ceramic Coated Pot)

by cooking the cabbage in the foil package, will you get any juices from the cabbage?

Hi Ron!The foil packet has some juice in it from the butter and cabbage. My husband always raves about my momma’s cabbage (He doesn’t say, “That’s not how my mom made it.” He says, “That’s not how YOUR mom made it!” lol), and he was raving about this meal as well. I have always made mine in a big pot of boiling water! So I’m excited to try it in the crockpot! But I always had carrots and celery in mine. Can I add them to the foil packet? Or just put ipot with the corned beef?

I have always put the potatoes, carrot and cabbage in the water around/under the corned beef. The cabbage goes in about 30 minutes before you are ready to serve that way. I had never thought to try it with the packet, so that will happen next brisket I cook! Thank you!Reply

IN THE INGREDIENTS YOU SAY 3.5-4 LB. CORNED BEEF BRISKET WITH SEASONING PACKET…….DOES THE SEASONING PACKET COME WITH THE BRISKET WHEN IT’S PURCHASED AT THE STORE?……….I’VE NEVER COOKED CORNED BEEF……

Hi Vonna!Yes, the package said “Corned Beef Brisket with Seasoning Packet” on it when Michael brought it home. I haven’t seen any that don’t have it, but I always go by the theory of asking at the store when I am in doubt! Enjoy!

You can buy the beef brisket it doesn’t have the seasoning packet but usually your corned beef brisket will have it. Using the Crock pot is the only way if do my corned beef brisket. The meat is so tender and moist.Aunt Lou says

Hi Annette!I don’t think this would fit in a casserole crock pot. It filled up my 6-quart. I would recommend using at least a 6-quart. The oval shape worked really well for me. Enjoy!
