🍔 About This Recipe

The McDonald's McChicken needs no introduction. It's one of the most popular and well-known items at the world's largest fast-food chain.

It's made with a crispy chicken patty, shredded lettuce, and McDonald's mayo, all sandwiched between two hamburger buns.

A homemade version of the patty can be made with ground chicken. A meat grinder is recommended to get the right texture, but a food processor also works.

🧑‍🍳 Replicating At Home

We'll use a mixture of ground chicken, spices, oil, and cornstarch for the patty. The key is to freeze the patties for an hour so they're easier to handle.

For the breading, we'll use regular breadcrumbs. To get the McChicken texture, they should be blended in a food processor to a finer consistency.

McDonald's has a secret recipe for the mayo, but I've found that Hellman's brand tastes pretty close.

For the Chicken Patty:

  • Chicken Breasts: We'll need one pound of breasts today, preferably with the skin on.
  • Oil: Any neutral flavored oil like canola or vegetable.
  • Cornstarch: Helps retain moisture in the patties when they're cooked.
  • Spices: Paprika, ground white pepper, garlic powder, onion powder, sugar, and salt.
  • Marmite: This is optional but adds a ton of umami. ¼ teaspoon is all you need.

For The Breading:

  • Eggs: I used two large eggs.
  • Flour: Use all-purpose flour. We only need three tablespoons.
  • Breadcrumbs: Regular breadcrumbs or panko breadcrumbs will both work. We will bring them in a food processor to get a finer consistency.

Additional Ingredients:

  • Oil: For frying the patties, any neutral-flavored oil with a high smoke point, like canola or vegetable.
  • Sesame Seed Hamburger Buns: I've found that Dempster's Hamburger buns work best for a copycat McChicken Sandwich.
  • Iceberg Lettuce: The best lettuce to use. It has a much crunchier texture than other varieties.
  • Mayonnaise: I recommend Hellman's mayo, though any brand will work. Avoid Japanese mayo. Its fishier flavor doesn't work well with this recipe.

🔪 Instructions

STEP 1: Grind the chicken breasts using a meat grinder or food processor.

STEP 2: Combine the chicken and the remaining patty ingredients in a medium bowl. Mix vigorously for 1 minute until well combined.

STEP 3: Line a baking sheet with parchment paper. Divide the chicken mixture into six equal portions and shape each portion into a ⅓-inch thick patty. Arrange the patties on the prepared baking sheet and freeze for 1 hour to firm up.

STEP 4: Whisk flour and eggs in a shallow dish.

STEP 5: Blend the breadcrumbs into a fine powder in a blender or food processor. Transfer to another shallow dish.

STEP 6: Take one chicken patty at a time, coat it in the wet batter, and then press it into the breadcrumbs. Set it aside and repeat with the remaining patties.

STEP 7: Heat about 1 inch of oil to 350°F. Fry 2-3 patties at a time for 4-6 minutes or until the inside reaches an internal temperature of 165°F. Transfer to a wire rack to drain excess oil.

STEP 8: To assemble, toast the hamburger buns. For each McChicken sandwich, spread two teaspoons of mayo on each bun. Place a chicken patty on the bottom bun, add shredded lettuce, and top with the other bun.

🥡 Storage & Leftovers

Storing: Store leftover McChicken patties in an air-tight container in the refrigerator for up to 3 days. You can also freeze them for up to three months.
