Cheesy Ranch Roasted Broccoli - Low Carb Recipe (1)When the people at Kraft asked me to come up with a nutritious low carb recipe featuring one of their many salad dressings, I knew it would be a fun project. There are so many delicious Kraft Salad Dressing flavors to choose from though, that I had trouble narrowing down my options!

I’m a huge fan of the Kraft Roku Blue Cheese dressing, but since blue cheese is kind of a love it or hate it thing, I thought it might be too risky.

I also love Caesar dressing, but the strong flavor profile limited my options and I wasn’t feeling it for this project – especially because I wanted this recipe to be kid friendly.

I finally decided to go with the Kraft Original Ranch, because you just can’t beat the classics. Seriously, who doesn’t love Ranch dressing?

Also, I knew that it would be widely available for any of you that are looking to try this recipe. And you should – because it’s super easy, and tastes amazing! Even Hungry Jr. liked this one – and he’s not usually a huge broccoli fan!

Generally when people think of ranch dressing, they think of pairing it with raw veggies – always delicious. I wondered though, how it would taste cooked right into the veggies instead. I was running with scissors on this one people!

Of course a little cheese never hurts, so I threw some of that in there too. To keep it from drying out, I added a little heavy cream – though you could easily substitute a lower fat option like half and half or milk if that better fits into your eating plan.

Roast these four simple ingredients together for about 40 minutes, and the result is a tangy, cheesy sauce that perfectly complements the slightly sweet flavor of the roasted broccoli.

An easy and versatile side dish, you can also add in some other veggies and/or some chopped chicken pieces to the pan before roasting, making it a nutritious and inexpensive one pot meal that the whole family will love!

While this low carb broccoli recipe may not be the prettiest girl at the ball – I can guarantee she’s got the best personality!

Description

An easy, versatile, and nutritious low carb side dish recipe that the whole family will enjoy!

Ingredients

Scale

  • 4 cups broccoli florets
  • 1/4 cup ranch dressing
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup heavy whipping cream (you can substitute milk if you prefer)
  • kosher salt and pepper to taste

Instructions

  1. Toss all of the ingredients together in a medium-sized bowl until the broccoli is well coated. Spread out the broccoli mixture in an 8 x 8 (or equivalent) oven proof casserole dish. Bake in a preheated oven at 375 degrees (F) for 30 minutes. Remove and stir – if not tender enough for your preference, place back in the oven for another 5 – 10 minutes, or until desired tenderness is reached. Serve hot.

    This is an amazing twist on Broccoli!!.. Will definitely be making this again… I substituted hidden valley bacon ranch for the regular ranch to give it a bacon flavor, which did not change the carb count. Definitely cook it for the recommended 30 minutes, if you want your broccoli tender..Love, Love, Love this❤️

    My family LOVED this!! It was a hit with everyone… and they don’t all like broccoli fixed the same way! I added some chopped pieces of bacon before putting it in the oven. Thanks for the new recipe!

    Made this last night and thought it was very good. My hubby, who’s a picky eater even enjoyed it. This same recipe can be changed to create a different experience each time simply by changing the type of cheese used, type of veggie, etc. I like the variety in that!

    Wow, this opens up a whole world of variations… My first thought was to add nuts to it: slivered almonds or pecan pieces. But then I started thinking that it would work as well with other veggies, too, like asparagus, green beans, or good old cauliflower. You could vary the cheese, too, with pepper jack, or smoked gouda, for example. What fun! Thanks.

    I haven’t been able to find a good, bottled ranch dressing in years! They are all too sweet! Yuck! So I make my own ranch dressing from scratch. Using that, this recipe looks good. Love your website and recipes, Melissa!
